The CPU's are near-identical with the difference being that the 'g' doesn't require a video card. Honestly, I looking at benchmarks: it's a toss up. PCSX2 can really take advantage of video card hardware so I will wager the performance will be near-identical on both with everything else being equal. 5700g has 8 cores 5600x has 6 cores. Runway for two extra cores is a little longer for general use but it's not much different there really for PCSX2 specifically.

Opinion: I don't know your situation or budget friend... But I would advise you to not pay for gt1030 as it's a waste of space and power. Get a GTX3060ti or GTX4060 which should last you for a while, hopefully without breaking the budget.
