do you have then leopard version of pscx2mac download from the downloads page? along with the nvidia cg framework (you need this no matter which video card you have) and the most recent version of xquartz (formerly called x11, and if you have x11, you need to upgrade to xquartz) and preferably the newest video plugin 0.1.0 (despite the other video plugin starting with a 2). all of those should make everything work unless something got bugged with your installation.
if those arent the cause, which video configs are you using along with speeds hacks etc.

Im now on OSX 10.6.8, so I have the snow leopard version downloaded. xQuartz sits at version 2.6.3. I have the nvida framework (it wouldnt even open the pscx2 menu without it and I have 0.1.0 as I can tell the difference with the Z buffer (though turning that off tends to let me play to about 5 minutes instead of 3).
Im trying a reinstall of the emulator as we speak.

if all else fails, making the leap to leopard might make the difference. it utilizes opengl 3.2 instead of 3.0 which snow leopard (and i think leopard) have. But i have a very similar machine to you and i dont seem to have any issues.
could it maybe be your rip of your KH disc??
