does the emulator take advantage of a 2560x1600 monitor and crossfire?

My system is 3.4 ghz oc i7 920 12 gigs of ddr 3 ram and radeon 5870's in crossfire.Do the games look more stretched at the 16:10 resolution than the 16:9 res?

With a 5870 you wont need crossfire anyway. The emulator is much more cpu dependant and a 5870 will play pretty much any game at hd resolution or better. For the display I think 16:10 would be streched, I have one but I dont notice any diffrence.

CPU: C2D E8400 @ 3.6
GPU: GTX 560Ti 2Gb
MOB: Asus P5QL
RAM: Crucial 4Gb
OS: Windows 7 64bit/XP 32bit

16:10 (1.6) is actually closer to 4:3 (~1.3) than 16:9 (~1.8).

So... games actually would look less stretched but still kinda off in terms of real dimensions.
And your graphics card should be fast enough to render the sh!t in that resolution perfectly.

True, but some games have widescreen mode and in this case 16:9 would be perfect while 16:10 would be slightly streched.
