do anyone know if the pcsx2 version 1.2.1 will work fine with an intel hd graphics 6000 video card?

It will work.
you'll get slowdowns if you push internal res too high or play GPU intensive games, though...
CPU : AMD Ryzen 7 3800X
Mobo : Asus PRIME B450-PLUS
GPU : NVIDIA GeForce RTX 3070

FFX will work, Grandia 3 will sometimes struggle if you push internal res too high. but the limiting factor will be more your CPU in Grandia 3's case.

Some games do that.
What you can do is enable widescreen hacks and use 16:9 aspect ratio in gs windows settings.

yea a i5-5250m will do fine, even with integrated graphics.
I wouldn't put the internal resolution higher than 2x native or 720p though.
just test it out how far you can go without a big speed impact, good thing you can change it on the fly without needing to restart the game.
Main Rig: i7-3770k @4.5ghz | 16GB DDR3 | Nvidia GTX 980 TI | Win 10 X64
Laptop: MSI GT62VR | i7-6700HQ | 16GB DDR4 | Nvidia GTX 1060 | Win 10 X64
You can also use frameskipping constant at 2/2 or 1/2 this would increase speed but you harder to play at that speed if you aren't experienced. Use framelimiter at normal mode to run sound according to speed if not sound will be very fast and bad. Hope it worked.

I didn't think about that first, but yea frameskip could lighten up the GPU bottleneck if there is one.
I remember there also was VU skip but it was such a bad hack and glitchy as hell.
