Is there a thread, post, or website for such a thing? Im interested in knowing what things like VU, Recompiler, and pretty much anything to know about pcsx2 is.

He made this blog about the new MTVU hack he had developed so it is focused on that but it pretty much explains the GS(Graphics Synthesizer) very well.
EE(Emotion Engine) details you could probably also find somewhere in the "Developer Discussion" section of the forums.
