I downloaded everything and then when I open it up, it crashes and the terminal says this:

From the official PCSX2 - MAC - FAQ's:

I dunno, never used the PCSX2!

and BTW: how do I set up PortAudio? (it specifically said image not found, but I downloaded GN)

Apparently it has been reported to work with 1.1 version.
Maybe you should give this a try
