As for F5, it's not assigned indeed at PCSX2 itself. GSdx has some hardcoded (not configurable) hotkeys, and F5 is one of them - it changes deinterlace modes.
Just a tiny bit more than fashionably late, but the GIT repo now contains PCSX2_keys.ini.default with the default kb shortcuts and some help.
The file is at the same directory as pcsx2.exe is, so before using it - it should be copied to the inis folder and renamed to PCSX2_keys.ini
