Confused - not getting the results I'd expect

So far I've tried emulating God of War and Ratchet and Clank 3, both of which are said to be playable on the compatibility list, but the games play in slow motion and suffer from some graphical glitches, and the sound just comes out like crap.

I figure I'm doing something wrong since these are my specs:

AMD Phenon II 3.2Ghz
4 GB RAM
Radeon HD 5870

So am I just doing something wrong? Shouldn't I be able to emulate most games flawlessly?

No. Some games (for example the ones you tried) put too much load even on the fastest computers.
That said, Intel CPUs do considerably better on PCSX2, yet my 4.21Ghz Core 2 Duo doesn't get full speed
in Ratchet and Clank.
Play with the speedhacks a bit. Maybe it's enough to make it playable for you.
