I usually leave them off. The only problem I had with 8bit textures on was in FFXII where the menu would slowly down.
My PS2 Resurrected:

Usually is better to keep them off until you find a game that might get advantage from it (like games that slowdown a lot with 99% cpu usage in the GSdx title bar could do better with it, but could just get worse too).
