If you overclock that i5-2500k enough, you shouldn't run into any issues because you are limited by CPU speed. With a good motherboard and enough patience, you can expect to reach a stable 4.4 or 4.5GHZ, maybe more.

With a Core i5-2500k, if I have to use different configuration and different speed hacks for each game, but if it runs at constant full speed and rarely crashes, it is ok, I will like and I would buy a Core i5 2500K.
The emulator will get better and faster with the time, will it? Does PCSX2 versions become faster each year on the same PC?
There are many good games to play, and I would start playing the lighter ones, such as Final Fantasy. Next years, I would try heavier games.
