With gsdx plugin In software mode, you can use more core than dualcore in hardware mode, this not to overclock your cpu, just try it and see in windows task manager.
Notebook ASUS A43TA|CPU AMD Llano APU A6-3400m Triple core (1 core disable) OC to 2.6+Ghz|GPU CF|HD 6520 400Mhz/667Mhz iGPU|HD6650M OC 780Mhz/985Mhz dGPU|RAM 8GB DDR3 1333|Windows 7 Ultimate Sp.1 x64 bit.

so basically it's not doing anything
to the processor itself?
can I use all the four cores?

Yes, try to set SW4 in software mode.

PCSX2 uses various plugins to emulate the PS2 Hardware that interfaces with the user. For example, GSDX emulates the PS2's Graphics Synthesizer(GS), which is the PS2's equivalent of a Graphics card. There are also plugins for sound, input devices, etc. They are required to run PCSX2.

GSDX uses your GTX 260 to accelerate graphics via microsoft's Direct3d API. GSDX can alternatively use your CPU to accelerate graphics in software mode, but this is not recommended.

Currently PCSX2 itself is not threaded to take advantage of more than 2 cores.
