Try to chmod shader's file to. Something like chmod +777 /Applications/pcsx2/plugins/gs/zerogs/opengl/ps2hw.fx . Don't forget to check, that this file is really exists.
How to run?

I keep getting this error when I run pcsx2. What can I do to fix it?

Install libcairo 2 library. I don't know how do you do such a thing on Mac's.

fixed that issue now I am getting a seg fault whenever I run the emulator.

are you running 0.9.6? you shouldn't be getting the segfaults on macbook pro i believe
