I've read all the guides and still can't get this thing running flawlessly

You may be able to run some 2D games at full speed, such as Disgaea. Otherwise, you'll probably need to just stick to playing on your real PS2 as rama said. If you don't have one (which you should in order to legally use PCSX2), they are quite cheap to buy ($89AU here, approx $85US).

Graphics card and RAM are fine for emulation, but you really need a better CPU to have any chance with most games running smoothly.

If you haven't already, make sure you're running at native res and experiment with speedhacks. Also disable effects processing for sound, remove interpolation, and make sure you create an ISO of your game to run from the HDD. LC ISO Creator is a great small program you can use for this: http://www.lucersoft.com/freeware.php
