Memory Card Saves Not Working Fully - Crash Twinsanity

I'll be short and sharp.
 
My game (Crash Twinsanity) appears to saving files, but with no actual content. Let me explain.

I play around, loose a life. Started with 4 when an initial save is made to the memory card. Now I have 3 lives. I save to the memory card, says it's successful.
Then I go back to load the original save file, and it says 0% completion, 4 lifes, 0:00:00 time spent playing. When I load this save file, it goes back to the very start of the game.
 
Does anyone have any suggestions? Post feedback but I'll list what I have done already
  • Letting the game format a new memory card
  • Not skipping any intros/titles
  • Different BIOS
  • Different ISO's of the same game
  • No Speedhacks

Please post the contents of the emulog.txt file after the problem occurs. The file can be found in "My Documents\PCSX2\logs" for the installer version or in "PCSX2\logs" for the portable/binary version.

Try to save a few more times. The time played counter should not say 0:00:00.
A similar problem happens in Growlanser 3 when saving. We're not sure what causes it but saving over it repeatedly sometimes fixes it.

That doesn't seem to work.
I saw somewhere that maybe using different sized memory cards would work - no solution.
Does it have anything to do with the in game formatting of the new card when it displays

Oh yes yes, I've done that. Tried it again just now and still no luck. 
Should anything be coming up in the console for PCSX2 when I save or? 
Because there is no indication of saving in the console.
