Perchance its the game, and not PCSX2 itself?

UPDATE: I gave Kingdom Hearts 1 a shot... result was alike.

By the way, would you be so kind and post screenshots of your XSplit & PCSX2 settings?

Open xsplit, click on View, then resolution. Make sure that is set to 1920x1080. If the window becomes too large, you can use the scale window option below it. If you don't have that set, it won't broadcast properly.

Nay. I've already set this according to that which you stated.
Could it be the slow speed of my internet that's retarding the resolution?
