Easy to solve : get a much better cpu or keep playing on your PS2 until you can afford one
Your cpu is really low for pcsx2
CPU : AMD Ryzen 7 3800X
Mobo : Asus PRIME B450-PLUS
GPU : NVIDIA GeForce RTX 3070
RAM : 16 Go

I can definetly help with Persona 3 FES as i had much time tinkering with it and asking help here on the forums.

Try skipdraw hack set to 1 if there is hair clipping, set EE Cycle more to the right side, set the slider to the right to 0 and if the audio is messed up try setting the audio to async. Hmmm... I always had moderate good luck with clicking on Preset (under emulation settings, on the bottom left corner) then dragging the slider between 2 and 4.

I was using a laptop when i played the game with horrible specs and it ran quite good sometimes.
