Please post the contents of the emulog.txt file after the problem occurs. The file can be found in "My Documents\PCSX2\logs" for the installer version or in "PCSX2\logs" for the portable/binary version.

Please make sure to enclose your emulog in code tags like so (remove the empty space on the closing code tag!):
[code]
Pasted emulog goes here
[ /code]
CPU : AMD Ryzen 7 3800X
Mobo : Asus PRIME B450-PLUS
GPU : NVIDIA GeForce RTX 3070

use the dev build of pcsx2 https://buildbot.orphis.net/pcsx2/index.php  and try MTVU speedhack on or off and maybe use dx11 instead of OGL. That cpu should not have any speed issues with the game

 Made no difference.

The Ogre stage is known as one of the hardest to emulate, but I'm not sure why these two stages in particular are trolling you. How bad are the framedrops on these maps? What are your emu settings? Do you have any speedhacks enabled? TTT in particular doesn't play nice with VU cycle stealing and EE timer hack can also produce issues. Mtvu might help but the game seems to only use one of the VUs mainly on the hardware anyway so might not help much.

I think this might be what I mentioned in one of gsdx threads. For me, the entire game runs perfectly in software mode, but the Ogre stage slows down in hardware mode despite seemingly not having high GPU utilisation.
