It was enabled. I guess Canis Canem Edit just doesn't care for widescreen or something.
However, it looks pretty crisp in this video.

Any ideas what kind of settings I should tweak to improve the visuals?
Right now, it's decent but not as good as it is in that video. And if I'm not mistaken, widescreen was enabled in order to get 1080p.

if you follow the settings given in the video you linked, you should get the same quality
CPU : AMD Ryzen 7 3800X
Mobo : Asus PRIME B450-PLUS
GPU : NVIDIA GeForce RTX 3070
RAM : 16 Go

Not much help here but the superior pc version is often available for next to nothing and looks far better, if your pc is powerful enough to run the ps2 version emulated then it shuld be at least as good to play on the PC without issues.
