Will my setup run PCSX2 & Wii portion of Dolphin at decent speeds?

Yes it will, the but i had to overclock my i7 to 3.5ghz to run SVR11 for wii on dolphin at full speed, so far its the most demanding thing i ran on my pc, your cpu is good (might need little overclock to run some wii games full speed), video card is good enough to run at decent resolution (dont know if it will pull 1920x1080, you will have to test, mine does and graphics are beautiful) and you have enough ram, emulators dont use much ram.

How well will it run at my HD's max Resolution which is 1360x768 ?

its not that high of a resolution, your monitor is like 15-17" then? you should be fine at that resolution but it depends on a game and you really need to test for yourself its not like i had the gpu you have, besides pcsx2 is free download latest official beta, select highest sse gsdx plugin available for you (sse4.1for me) then configure it use dx11 hardware and set your resolution in d3d internal res boxes, if u check native it will used ps2 resolution which looks really crapy but runs fast, in speed hack you can check the recommended ones they usually dont cause any glitches but others do, thats pretty much it you shouldn't have much trouble you cpu is pretty strong and thats the main requirement for pcsx2.

I have the same gpu and I run almost all ps2 games I have in full hd or higher so you should have no problem with your max resolution. Cant speak much for dolphin though since Ive only tried 2-3 gc games a long time ago and no wii.
