Thanks everyone. Yes, I was loading from the actual disk copy instead of the ISO. Once I properly made an ISO I was able to run it with no problem! Now it's just a matter of finding the balance of looking good to playing good, but I am shocked at how gorgeous this game looks in high res! I'm going to scour the local EB games for some PS2 stuff that I missed since going to 360 a few years ago. Thanks again.
