Im afraid you can't, unless you are a lucky enough person to find a windows driver which does analog buttons. Unfortunately windows only registers ON or OFF for buttons, so there's no room for pressure sensitivity
The older versions of ssxpad did a thing where you press a wierd combination of buttons on the ps2 pad to get different pressures, however it felt horrible to actually use, so got removed.

Lilypad supports pressure sensitive button emulation.
You'll have to map a keyboard key to a button and set its sensivity.
Awkward, but gets you through the games that need them.
