For some reason, I can't get the controls for PCSX2 to work.
For example, I got on the title screen for Ratchet and Clank, but when I press keys, nothing happens. Help.

Have you configured the controller in the settings?

What are the default controls?

They are blank, you need to map each button to a button on your controller or a key on your keyboard.

I will assume you plan on playing on a keyboard and for that map them to whatever YOU feel comfortable with.
I play with a 360 controller and the button layout is almost identical so I just mapped the buttons in the emulator with the button in the same place on the 360 pad.
