You just need to update your packages. Sudo apt-get update && sudo apt-get upgrade.
Okay, now it has gone back to wanting to delete everything...

I don't see the picture.

But try to install package one by one to find which one trigger the removal of everything.
I am getting this, not sure what to do. (keep in mind I haven't used linux based os's in about 6-7 years, and am rusty, even then I was intermediate user)

Open a terminal. Try typing sudo apt-get build-dep pcsx2-unstable:i386 . Does it install the dependencies properly?

It was a good idea you waited and asked before installing. You would have wiped out your desktop environment due to problem with multiarch.
