Is it worth considering a backup/unofficial wikia-based wiki again? I'd be happy to write and maintain something.
Unless you are capable of copying over 1000s of pages, it's not worth it.

Nah, I was thinking of something just to cover the basics. Essentials like how to get it up and running, and dealing with the most common questions and problems.
