Change your interlacing settings through the GSdx dialog or use the F5 key.

Did that and I got the same result. I googled and I found this old thread:http://forums.pcsx2.net/Thread-Jak-and-Daxter-weird-blurry-effect
It's something have to do with ingame post processing effect.

I never noticed the blurry effect myself, guess I haven't played it in a while. Try half pixel offset or the Wild Arms hack in GSdx.

Game looks perfectly clear to me, using the most recent GIT build. Using Opengl HW. But there are some graphical glitches with there eyes

Perfectly... not sure man, I remember the remaster looking a bit better and that was running at 720p or less.
Yeah I noticed Jak's right eye doesn't blink. Not a big deal
