After all these years why can't we at least have a game list in the emulator?

Because devs focused on more important things like improving compatibility, solving bugs, crashes, and a few other things (Vulkan renderer, 64 bit builds)
It will come eventually, but if you need it more quickly, you can share your dev skills with the team and do it since it's an open source project.
Any help is welcome
The others either has more time/developers and perhaps not needing to deal with old code and everyone has their own specializations even in one coding language.
