Your new gpu will be a good plus from your previous but your cpu will be just okay. Don't expect to play the more graphic intensive games because of your cpu raw speed.

OS: Win 7 Ultimate x64 sp1, MoBo: Asus P5QD Turbo, CPU: Q6600 @ 3,0Ghz, RAM: Trancend 2x2gb 6-6-6-18 800 MHz, GPU: HD 4850 1gb.

There's only a few choices anyway:
i5-750 2.66GHz (Turbo 2c: 3.20GHz)
i5-650/655k 3.20GHz (Turbo 2c: 3.33GHz)
i5-660/661 3.33GHz (Turbo 2c: 3.46GHz)
i5-670 3.46GHz (Turbo 2c: 3.60GHz)
i5-680 3.60GHz (Turbo 2c: 3.73GHz)

Even the lowest clocked i5-750 with Turbo disabled would be pretty decent and is probably equivalent to the Core 2 Duo E8400 at stock. Besides, I seem to remember Lynnfields and Bloomfields being faster than Clarkdale clock-for-clock. In fact, I think the i7-920 @ 2.66GHz was just ~1 FPS behind the i3-530 @ 2.93GHz in the FFX-2 benchmark.

I think I have my pc build ready..

Intel i5-660 3.33GHZ LGA1156 4mb Cache
Sapphire VGA ATI HD5830 1GB GDDR5 PCI-E
Kingston DDR3 6GB (3x2GB) 1600mhz

Would that do the trick? Would I see the following games run at full fps with this sort of setup?

Onimusha Series
Mortal Kombat Armageddon
Resident Evil 4/Code Veronica
Final fantasy X/X2/XII
